Instructions
-
Hard-boil and peel
Hard-boil and peel all 12 eggs. Slice 6 whites in half and set aside for the eggs; the other 6 whites won’t be needed. Remove and save the yolks from all 12.
-
Make the base mix
Mash the yolks with mayonnaise, mustard, garlic powder, yellow curry powder, and salt until smooth. Divide into 3 equal portions.
-
Bloody Mary eggs
Mix the Bloody Mary mix, Old Bay, celery salt, and garlic powder into one portion of the base mix. Rim 4 egg whites with Tajín, fill with the Bloody Mary mixture, and top with celery, pepperoni, crispy bacon, and green olives.
-
Breakfast eggs
Fill 4 egg whites with a plain portion of the base mix. Top with crispy bacon, charred breakfast sausage, and mini pancakes. Drizzle with maple syrup right before serving.
-
Smash Burger eggs
Fill the remaining 4 egg whites with the last portion of base mix. Smash and sear the mini burger patties until browned and cooked through. Top each egg with lettuce, tomato, onion, and one mini patty.
-
Make the burger sauce
Stir all sauce ingredients together until smooth. Taste and adjust with salt and pepper. Chill if time allows.
-
Finish and serve
Spoon the Brilliant Burger Sauce over the Smash Burger eggs right before serving.
